Homemade noodles have a wonderful chewiness that I love. Sure, they’re more work than opening a box of dried pasta, but for special occasions you may find they’re worth it.

Ingredients

  • 3 Tbs - flax meal (ground flax seed)
  • 9 Tbs - water
  • 1/2 cup - soy milk, plain and unsweetened
  • 3 1/2 cups - whole-grain flour

Instructions

  1. Using a wire whisk, beat the flax meal and water together for one minute. Let rest for 5 minutes, then whisk again for 1 minute. Stir in the soy milk.
  2. Add the flour and stir to bring the ingredients together. Your hands work well for this. Turn the dough onto a work surface and knead until smooth, dusting your hands with flour to keep the dough from sticking to your hands. Cover the dough with a clean kitchen towel and let rest for 10 minutes.
  3. Lightly dust a work surface with flour and roll out the dough to about 1/8"-1/4" thick. Use a pizza wheel or sharp knife to cut the dough into long noodles. I make mine about 1/4"-1/2" wide.
  4. Loosely pile the noodles and allow them to air dry until ready to use, up to a few hours.
  5. When ready to cook the noodles, add them to a large pot of boiling water. Cook for about 2 minutes and gently remove them to a colander to drain before serving in your favorite recipe.
