Do you love mashed potatoes? Of course you do! It’s the ultimate comfort food. Here’s a recipe to get you started. But you won’t need a recipe after you make these the first time. Just steam or boil cubed potatoes (red, russet, yellow, whatever) until they’re tender (about 15-20 minutes), then use your mixer or a potato masher to whip them into shape, while adding soy milk to reach your desired consistency. Easy peasy.

Ingredients

  • 2.5 lbs - potatoes, washed and chopped into bite-size pieces
  • 1 cup - soy milk, plain and unsweetened

Instructions

  1. Boil or steam the potatoes until tender. Drain.
  2. Using a potato masher or a stand mixer, whip the potatoes until smooth, or leave some chunks if you prefer. Add the soy milk and continue to beat until well combined. Salt to taste.
