Instant mashed potatoes and frozen vegetables make Easy Shepherd’s Pie a dish you can have any night of the week.   If you love the flavor combination of potatoes and mushrooms, we highly recommend making the optional Mushroom Sage-Gravy for ladling on top before serving.   You can make it on the stove while the pie is in the oven.

Instant mashed potatoes are available everywhere, but as of this writing, very few brands are free of milk, butter, and oil. So read those labels.  Bob’s Red Mill Creamy Potato Flakes contain just dehydrated potato flakes.  You can order them online, then go ask the manager of your grocery store to start stocking them.

Makes: one 13"x9" casserole

Ingredients

  • 1 16 oz pkg - frozen peas and carrots
  • 1 16 oz pkg - frozen soup vegetables
  • 1 cup - walnuts
  • 1 1/2 cups - water
  • 2 tsp - tamari sauce
  • 2 Tbs - cornstarch
  • 1 14 oz pkg - instant mashed potatoes mix (we used Bob's Red Mill Creamy Mashed Potatoes)
  • 4 cups - soy milk, plain and unsweetened
  • 5 cups - water
  • 1 tsp - ground paprika (optional)
  • 1 recipe - Mushroom Sage Gravy (optional, see link to recipe below)

Instructions

  1. Preheat the oven to 375 °F. Line a 13"x9" baking dish with parchment paper.
  2. Using a food processor or blender, chop the walnuts into a fine crumb. Set aside.
  3. Spread the frozen vegetables on the bottom of the baking dish. Sprinkle the walnuts on top. Stir together the 1 1/2 cups of water, tamari, and cornstarch to dissolve the cornstarch, then pour over the vegetables.
  4. Bake for 40 minutes until the mixture is hot, stirring occasionally.
  5. Meanwhile, combine the instant potatoes, soy milk, and water - adding more or less milk (or water) to achieve your desired consistency. Salt to taste. Spread the potatoes over the hot vegetables and bake another 20 minutes.
  6. If you are making the Mushroom-Sage Gravy, you can make it now, while the Shepherd's pie is in the oven.
  7. Before serving, sprinkle the top of the Shepherd's pie with the paprika. Serve with the Mushroom-Sage Gravy on the side or ladle over top before serving.
