Big, chewy, portobello mushrooms make for big, chewy Barbecued Portobello Sandwiches. Add a hearty sandwich bread such as the Food For Life whole, sprouted grain buns or English muffins and you’ll have yourself one heck of a hearty, mouth-watering sandwich.   They go together quickly too, for a satisfying, hot lunch. You can eat two of these for under 500 calories!  Add a fresh, green, side salad or low-calorie veggie to up your veggie count for the day.

Buy the biggest, portobello mushroom caps you can find, because they shrink as you cook them.   You can slice them to any thickness you like – we usually cut them to about 1″ wide.  Slathered in our favorite no-oil barbecue sauce- Stubb’s BBQ Sauce – Smokey Mesquite  – they look impressive dangling over the edges of the sandwich bun. You can even mix up your favorite mushrooms, as we did in the picture here.  It’s an easy, and versatile recipe so go ahead and experiment!

Barbecued Portobello Sandwiches

Makes:  6 sandwiches

Ingredients

  • 4 large - Portobello mushroom caps, sliced
  • 1 medium - onion, sliced thinly
  • 1/2 cup - barbecue sauce (oil-free)
  • 6 medium - whole-grain burger buns or English muffins

Instructions

  1. In a large, non-stick skillet over medium heat, dry saute the mushrooms and onions, covered, until tender, about 5-10 minutes.
  2. Stir in the barbecue sauce, and cook another 2-3 minutes until heated through. Serve on the buns.
