These tacos are simple to make and full of zesty flavor. The Pineapple-Pepper Salsa is yummy and cooling, a perfect accompaniment to the Caribbean flavored tofu. Broiling the tofu, rather than baking, makes short work of these lunchtime favorites.
Caribbean Tofu Tacos with Pineapple Salsa
Ingredients
- Caribbean Tofu
- 2 14 oz pkgs - super firm water-packed tofu, patted dry
- 4 Tbs - Caribbean or Jerk seasoning (we used Mrs Dash Caribbean Citrus Seasoning Blend)
- Pineapple-Pepper Salsa
- 1 16 oz pkg - pineapple chunks, fresh or frozen (thawed)
- 1 medium - green bell pepper, chopped
- 1 medium - cucumber, chopped
- Toppings
- 1 medium - avocado, skin and pit removed, sliced
- 12 - corn tortillas (we used La Tortilla Factory White Corn Tortillas)
Instructions
- Preheat the oven to Broil. Line a baking sheet with parchment paper.
- To make the Caribbean Tofu: slice the tofu in half by height, then cut each half into 6 sticks. Sprinkle the Caribbean seasoning on a plate, then roll each tofu stick in the seasoning to coat all sides. Place on the prepared baking sheet. Broil for 2 minutes, turn the tofu over, and broil another 2-3 minutes.
- To make the Pineapple-Pepper Salsa: stir together the salsa ingredients and set aside.
- To serve, warm the tortillas in the microwave for a few seconds to soften them. Fill each tortilla with two slices of the broiled tofu, a spoonful of the salsa, and a slice of avocado.
