These tacos are simple to make and full of zesty flavor. The Pineapple-Pepper Salsa is yummy and cooling, a perfect accompaniment to the Caribbean flavored tofu. Broiling the tofu, rather than baking, makes short work of these lunchtime favorites.

Caribbean Tofu Tacos with Pineapple Salsa

By June 25, 2014

Ingredients

  • Caribbean Tofu
  • 2 14 oz pkgs - super firm water-packed tofu, patted dry
  • 4 Tbs - Caribbean or Jerk seasoning (we used Mrs Dash Caribbean Citrus Seasoning Blend)
  • Pineapple-Pepper Salsa
  • 1 16 oz pkg - pineapple chunks, fresh or frozen (thawed)
  • 1 medium - green bell pepper, chopped
  • 1 medium - cucumber, chopped
  • Toppings
  • 1 medium - avocado, skin and pit removed, sliced
  • 12 - corn tortillas (we used La Tortilla Factory White Corn Tortillas)

Instructions

  1. Preheat the oven to Broil. Line a baking sheet with parchment paper.
  2. To make the Caribbean Tofu: slice the tofu in half by height, then cut each half into 6 sticks. Sprinkle the Caribbean seasoning on a plate, then roll each tofu stick in the seasoning to coat all sides. Place on the prepared baking sheet. Broil for 2 minutes, turn the tofu over, and broil another 2-3 minutes.
  3. To make the Pineapple-Pepper Salsa: stir together the salsa ingredients and set aside.
  4. To serve, warm the tortillas in the microwave for a few seconds to soften them. Fill each tortilla with two slices of the broiled tofu, a spoonful of the salsa, and a slice of avocado.
