The ingredients in these Pretty Asian Burgers are so colorful, they’re lovely to look at while they’re cooking in the skillet. Once you nestle one into a whole-grain bun and cover it with lettuce, however, it’s the flavor that will attract your attention.

Pretty Asian Burgers

Ingredients

  • 1 medium - red bell pepper, finely chopped
  • 1 medium - green bell pepper, finely chopped
  • 2 cups - finely chopped red cabbage
  • 1 15 oz can - great northern beans, DO NOT DRAIN
  • 2 Tbs - tamari soy sauce
  • 1 1/2 cups - rolled oats (regular, not instant), uncooked
  • 7 - whole-grain sandwich buns
  • 1 medium head - leaf lettuce for topping

Instructions

  1. In a non-stick skillet over medium heat, dry sauté the red pepper, green pepper, and cabbage until tender.
  2. In a large mixing bowl, mash the beans with their liquid. Stir in the sautéed vegetables, tamari sauce, and oats. Stir well. Set aside for 15 minutes to allow the oats to absorb some of the liquid. Shape into 7 pattiess.
  3. Preheat a non-stick skillet or griddle over medium heat (I usually just wipe out the skillet used to cook the peppers and cabbage and reuse it to cook the burgers.) Cook the burgers for 3 minutes on each side.
  4. Serve on the whole-grain buns with the lettuce.
