Avocado, salsa, and potato – that’s all it takes to put together a really quick and delicious meal. Lunch is a no-brainer with this simple recipe. We’ll often eat this cold, using already-baked potatoes from the fridge.  At work, you can do the same, or use one of those microwave-ready potatoes for a nice hot lunch.

Avocado in a Potato Boat

Yield : 8 loaded red potatoes

Ingredients

  • 8 medium - baked red potatoes
  • 4 cups - your favorite salsa (we used Santa Barbara Mango Peach Salsa)
  • 1 medium - avocado, skin and pit removed, sliced

Instructions

  1. If desired, warm the baked potatoes in a microwave.
  2. Slice open a potato, top with salsa and a few slices of avocado.
