Roasting Butternut Squash Seeds

Have you ever wondered if the seeds you just scraped out of that Butternut Squash are edible?  Yes, they are! And just a few simple steps will get you from squash to snack.

Step 1:  Preheat the oven to 300 °F.  Line a baking sheet with parchment paper.

Step 2:  Slice the butternut squash from stem to bottom.  Scrape the seeds into a colander.

Step 3:  Pull most of the flesh from the seeds, then rinse the seeds under cold, running water.  Pat dry on a clean towel.

Step 4:  Spread the seeds onto a parchment-lined baking sheet, and roast at 300 °F for 20-25 minutes. Allow to cool before serving.
