The combination of Portobello mushrooms and avocado is truly scrumptious! This is an easy dish for a busy day.
Portobello Tacos with Green Salsa

Yield : 12 tacos
Ingredients
- 1 medium - red onion, sliced thinly
- 1 medium - green bell pepper, sliced thinly
- 5 large - Portobello mushroom caps, sliced into strips
- 1 medium - avocado (skin & pit removed), sliced into 12 equal portions
- 1/2 tsp - taco seasoning (we used Mrs Dash Fiesta Lime seasoning)
- 12 - corn tortillas (we used La Tortilla Factory White Corn Tortillas)
- 3/4 cup - prepared salsa verde (green salsa)
Instructions
- In a large non-stick skillet over medium heat, cook the onion, pepper, and mushrooms until the onions start to brown. This should take about 15 minutes.
- To serve: Warm the tortillas in the microwave for about 10 seconds. Spread each with a portion of the avocado, some of the mushroom filling, and a tablespoon of salsa verde.
Tip:
At the time of writing this, it's still challenging to find oil-free, whole wheat tortillas in our local grocery stores. The best oil-free tortillas we've found are La Tortilla Factory's White Corn Tortillas.
