Leftover cooked pasta makes a great addition to almost any soup. Here’s an oh-so-simple soup recipe that you can change up with different vegetables, and different leftover pasta (or grains!), throughout the year. The amount of pasta you add to this Leftover Pasta Soup is not important, use what you have on hand.
Leftover Pasta Soup
Ingredients
- 1 28 oz can - whole tomatoes
- 4 cups - water
- 1 16 oz pkg - your favorite frozen vegetables for soup (we used Birds Eye Recipe Grilling Blend in the photo)
- 4 cups (or however much you have) - leftover cooked pasta
Instructions
- In a large saucepan over medium heat, stir together the tomatoes, water, and vegetables. Coarsely chop the tomatoes in the pot using the edge of your stirring spoon.
- Cook the mixture for about 15 minutes, or until hot. Stir in the pasta and salt to taste.
