Flax seed is an amazing food, often referred to as a superfood.  Studies have linked consumption of flax seed, in the form of flax meal (ground flax seed), to decreased risk of breast cancer, decreased risk of prostate cancer, and as an effective treatment for sensitive skin (see nutritionfacts.org for summaries of these studies).  So replacing eggs with these “flax eggs” in your favorite baked recipes is a win-win.

Flax Eggs as an Egg Replacer in Baking

Ingredients

  • 1 Tbs - ground flax seed (flax meal)
  • 3 tbs - water

Instructions

Whisk together the ground flax seeds and water for a few seconds, then set aside for 5 minutes to thicken.
