When you’re hankering for pizza, and aren’t up for the fuss of making your own dough (even though it’s delicious), these Easy Sweet-N-Smoky Mini Pizzas are just for you.  Food for Life® Sprouted Whole Grain English Muffins make wonderful pizza crusts. Of course you can use your own favorite brand of English muffins, just make sure they’re whole grain, have no oil, and list no unrecognizable (industrial chemicals) ingredients on the label.  Food for Life® fits the bill.  As they say on their website, “These unique English Muffins are different from any you’ve ever tasted.”  We agree!  And they are really hearty, lending a terrific “chew” to these mini-pizzas.  They are available nationwide in the freezer section of many grocery stores.   Keep them in your freezer and just use them as needed.

The sauce in this recipe is what gives these pizzas their sweet-n-smoky flavor.  We love it.  It’s a great change of pace from common pizza sauce.  And the sauce freezes well, so you can make a bigger batch of it and freeze it in pint jars for later. When it comes to having delicious home-cooked food, without starting from scratch every time, big-batch cooking is your friend.

Easy Sweet-N-Smoky Mini-Pizzas

Yield : 12 min-pizzas

Ingredients

  • Sauce
  • 1 15 oz can - tomato sauce
  • 1 Tbs - maple syrup
  • 1/4 cup - finely chopped fresh basil
  • 1/2 tsp - liquid smoke
  • Crust
  • 6 - Whole grain English muffins, split in half
  • Toppings
  • 2 8 oz pkgs - sliced fresh mushrooms, or other vegetables of your choice
  • 2 cups - pineapple chunks, fresh or frozen

Instructions

  1. Preheat the oven to broil. Position the oven rack on the highest position, closest to the top broiler. Line a large baking sheet with parchment paper.
  2. Whisk together the sauce ingredients. Salt to taste. Set aside.
  3. Place the mushrooms in a microwave-safe bowl and microwave on High for 3-4 minutes. Drain and set aside.
  4. Place the muffins, cut-side up, on the prepared baking sheet. Top with sauce, mushrooms, and pineapple.
  5. Broil for 2-3 minutes until the edges of the muffins start to brown and the toppings are hot.
