Spaghetti with Black Bean Sauce

Ingredients

  • 1 16 oz pkg - whole-grain spaghetti
  • 1 28 oz can - whole tomatoes, chopped
  • 1 15 oz can - black beans or black soy beans (do not drain)
  • 2 large - portobello mushroom caps, cleaned and chopped
  • 1 tsp - turbinado sugar
  • 1/8 tsp - garlic powder

Instructions

  1. Cook the pasta according to the package directions, then drain.
  2. Meanwhile, in a large, non-stick skillet over medium heat, cook the mushrooms, covered, for 5 minutes. Add the tomatoes, beans, sugar, and garlic powder. Cook the sauce, uncovered, over medium heat until thick, about 20 minutes. Salt to taste.
  3. To serve, ladle the sauce over the spaghetti noodles.
