Sloppy Lentil Joes are a satisfying sandwich anytime of year, but perhaps especially so in cold weather. These are very filling and taste even better the next day, so enjoy those leftovers. The filling freezes well too, so make a double batch for quick meals later. Here again, we’ve used lentils and rice as a replacement for the ground beef found in traditional Sloppy Joe sandwich recipes. This is comfort food in a bun.
Sloppy Lentil Joes
Yield : about 6 filling sandwiches
Ingredients
- 6 - whole grain sandwich buns or English muffins
- Lentil and Rice Filling
- 1 cup - brown lentils, rinsed
- 1 cup - brown rice, uncooked and rinsed
- 1/2 medium - red onion, diced
- 1/2 medium - green pepper, diced
- 3 3/4 cups - water
- Sauce
- 1 15 oz can - tomato sauce
- 1 Tbs - red wine vinegar
- 1 Tbs - tamari soy sauce, reduced sodium
- 2 Tbs - maple syrup or agave nectar
- 1 pinch - ground cloves
Instructions
- In a large saucepan over medium heat, sauté the onions and peppers, adding a little water as needed to prevent sticking. Add the lentils and rice, and stir continuously for 1-2 minutes, then add the water. Bring to a boil, reduce the heat to medium-low, cover, and cook for 30 minutes, until the lentils and rice are tender, and all the water has been absorbed.
- Stir in the sauce ingredients, and cook over medium-low heat another 15 minutes, stirring frequently, until the mixture is thick. Salt to taste.
- Serve on whole grain buns.
