We like the way the sweet and smoky flavor of the pizza sauce goes with the light, corny-flavor of the crust. Feel free to use your favorite pizza toppings instead of the Primavera mix if you like.

Pizza Primavera on a Cornmeal Crust

Ingredients

  • 1 16 oz pkg - frozen broccoli stir-fry vegetables (broccoli, carrots, onions, red peppers, water chestnuts, mushrooms, celery)
  • 1 28 oz can - tomato sauce
  • 3 Tbs - brown sugar
  • 1/2 tsp - liquid smoke
  • 5-6 large - basil leaves, finely chopped
  • 1 recipe - Cornmeal Pizza Crust (see recipe link below)

Instructions

  1. Preheat the oven to 375 °F. Place a pizza stone or pizza pan in the oven to preheat.
  2. Thaw the frozen vegetables by running them under hot water in a sieve. Chop them into small, bite-size pieces. Using your hands, squeeze as much water out of them as you can, then set them aside.
  3. Stir together the tomato sauce, brown sugar, liquid smoke and basil. Salt to taste. Set aside.
  4. Make the Cornmeal Pizza Crust according to the recipe.
  5. On a work surface sprinkled with either corn flour or whole wheat flour, roll out the dough to the size that will fit on your pizza stone or in your pizza pan. Transfer the dough onto a piece of parchment paper on a pizza peel, top the dough with sauce and chopped vegetables. Using the peel, slide the pizza - with the parchment paper - off the peel and onto the hot stone (or pan) in the oven. Bake for 10-12 minutes.
