Pasta Pizza is a fun alternative to traditional pizza crusts, and is easy to chew! Why? Because the crust is made from cooked pasta rather than a flour dough.
Pasta Pizza
Ingredients
- Pasta Crust
- 1 13 oz pkg - whole-grain rotini pasta (spiral or corkscrew)
- 1 12 oz pkg - silken firm tofu
- 1/4 cup - miso, mellow white
- 2 Tbs - lemon juice
- Topping
- 2 8 oz pkgs - mushrooms, cleaned & sliced
- 1 10 oz pkg - cherry tomatoes, cut in half
- 2 Tbs - dried Italian or pizza seasoning (we used Frontier Pizza Seasoning Blend)
- 8-10 medium sized - fresh basil leaves, finely sliced
Instructions
- Preheat the oven to 425° F. Line a pizza baking pan with parchment paper.
- Cook the pasta according to the package directions. Drain and set aside.
- Cook the mushrooms in the microwave for 5 minutes. Drain and set aside.
- In a food processor, blend the tofu, miso, and lemon juice until smooth, about 5-1o seconds. Salt to taste.
- To assemble the pizza:
- Stir together the pasta and the tofu mixture.
- Spread the pasta and tofu mixture onto the pizza pan, pressing down lightly so it holds together.
- Sprinkle the mushrooms and tomatoes on top, then sprinkle with the Italian or pizza seasoning. Bake for 20 minutes.
- After removing from the oven, sprinkle the fresh basil on top of the pizza.
- Allow to cool for a few minutes. It will cut and hold together better when it's cooled.
