Pasta Pizza is a fun alternative to traditional pizza crusts, and is easy to chew! Why? Because the crust is made from cooked pasta rather than a flour dough.

Pasta Pizza

Ingredients

  • Pasta Crust
  • 1 13 oz pkg - whole-grain rotini pasta (spiral or corkscrew)
  • 1 12 oz pkg - silken firm tofu
  • 1/4 cup - miso, mellow white
  • 2 Tbs - lemon juice
  • Topping
  • 2 8 oz pkgs - mushrooms, cleaned & sliced
  • 1 10 oz pkg - cherry tomatoes, cut in half
  • 2 Tbs - dried Italian or pizza seasoning (we used Frontier Pizza Seasoning Blend)
  • 8-10 medium sized - fresh basil leaves, finely sliced

Instructions

  1. Preheat the oven to 425° F. Line a pizza baking pan with parchment paper.
  2. Cook the pasta according to the package directions. Drain and set aside.
  3. Cook the mushrooms in the microwave for 5 minutes. Drain and set aside.
  4. In a food processor, blend the tofu, miso, and lemon juice until smooth, about 5-1o seconds.  Salt to taste.
  • To assemble the pizza:
  1. Stir together the pasta and the tofu mixture.
  2. Spread the pasta and tofu mixture onto the pizza pan, pressing down lightly so it holds together.
  3. Sprinkle the mushrooms and tomatoes on top, then sprinkle with the Italian or pizza seasoning.  Bake for 20 minutes.
  4. After removing from the oven, sprinkle the fresh basil on top of the pizza.
  5. Allow to cool for a few minutes. It will cut and hold together better when it's cooled.

Nutrition (per serving): 440 calories, 70% calories from carbohydrates, 19% calories from protein, 11% calories from fat, 12.1g fiber.
