Do you love the flavor of hard-boiled eggs?  Are you wishing your healthy, plant-based diet could give you another reason to break into your “Yay, I don’t have to give up my favorite flavors” happy dance? Wish granted.  Let us introduce you to the amazing, eggy-flavor of Himalaya Black Salt.  You’ll be suprised when you taste this stuff.  Sprinkle it on scrambled tofu and you’ll think you’re eating scrambled eggs.  Add it to this recipe for Mock Egg Salad Sandwich and you’ll think you’re chowing down at an old-fashioned diner where things like egg salad and tuna salad appear on the menu.  Of course, we recommend serving this creamy filling on whole grain, not white, bread or toast.

If you’ve never heard of Himalayan Black Salt before (often just called “black salt”), you can find it online, or in Indian grocery stores. When you see it you’ll notice it’s not actually black, it’s more of a pinkish-gray. It has the distinct taste of salted, hard-boiled eggs. If you enjoy that flavor (we know some people who think eggs are gross), then we suggest adding some to this mock egg salad for the ultimate “are you sure this isn’t egg salad?” experience.  Serve this yummy filling on two halves of hearty whole-grain bread or English muffins, such as the Food For Life® brand, found in the freezer section of many grocery stores. Add extra goodness with other fresh veggies, such as sliced tomatoes and cucumbers. These sandwiches go together fast for when you need a quick and tasty meal.

Yield : about 3 cups of filling

Ingredients

  • 2 14 oz pkgs - extra firm tofu, water packed, drained
  • 2 Tbs - fresh dill, finely chopped
  • 1/2 cup - pickle relish, dill flavor
  • 2 Tbs - Dijon mustard
  • 1 medium - carrot, finely shredded
  • 4 - whole-grain English muffins (such as Food For Life® brand)
  • 1/2 tsp - black salt (to taste)

Instructions

  1. Mash the tofu in a bowl, and stir in the dill, relish, mustard, and carrot. Serve on English muffin halves. Sprinkle to taste with the black salt.
